Delicious Veggie Enchiladas Recipe
Yes, you can enjoy tortillas with diabetes! These delicious veggie enchiladas are packed with flavor and diabetes-friendly ingredients. It's all about balance—enjoy your tortillas and stay on track! 💚 #DiabetesFriendly #VeggieEnchiladas #BalancedEating #DiabetesDigital #TortillasAndDiabetes
Here’s what you need:
1 jar of green enchilada sauce (can also use red if you prefer)
1 bag of corn tortillas
2-3 cups of any veggies you have on hand (I used 1 yellow and 1 green zucchini + 1/2 yellow onion)
1 can of beans
8 oz of mozzarella cheese
Here’s what you do:
Chop 2-3 veggies, then sauté in 1 teaspoon of olive oil on medium heat for 10 minutes or until they get soft; then add beans and cook an additional 5 minutes until sauté thickens
Heat tortillas in a HOT large pan or griddle for 10-15 seconds on each side.
Add a layer of enchilada sauce to bottom of a baking dish
Then add veg sauté, enchilada sauce and cheese to the center of each tortilla
Roll up tightly and then place in your baking dish
Repeat 5-6 times (depending on how much space your dish has)
Cover with foil and cook at 350F for 20-25 minutes or until the cheese has melted
Then remove foil from pan and bake for an additional 5 minutes
Here’s what you need:
